This is a fun and delicious an example of how coffee producers are using innovative approaches to enhance flavors—much like winemakers and beer brewers.
The lactic fermentation process adds complex fruit flavors and rich body. Super ripe coffee cherries are fermented in tanks without oxygen or water. The sugars are transformed into lactic acid, which creates complex fruit flavors, sweetness and lush body. After fermentation, the coffee is sun-dried.
